Rocche Imperatore Chinato
Flavored wine produced with nebbiolo grapes from our vineyard Rocche Imperatore. This wine ages two years in oak Slavonia barrels and after it is flavored. The wine macerate in a tub with natural aromas like: china calissaia, peel of dried citrus fruits, cinnamon and cloves and a small amount of an aromatic herb that promote food digestion and diuresis and that must be collected in a particular time of the year and that grows up near woods. After 40 days we proceed with filtration and bottling.
The secret of our "Rocche Imperatore chinato" is the right dosage of the ingredients and the total absence of chemical elements. This wine is the celebration of our great-grandfather who in 1819 used for the first time this recipe.
The wine chinato today is appreciated with chocolate that enhance his flavor sweet and bitter in the same time; it's great like aperitif, digester and it's refreshing when we drink it on the rock with water and selz; with hot water and lemon peel we can make a very good punch.
